Alternative title: I needed something to stop my stomach grumbling like a gut possessed during double yoga class and didn’t want to snack on too much fruit for fear of sewage farts.
“You don’t even like nuts” my brain protested.
“And you had a funny do after trying a cashew nut that time…” That was true, I did.
“I think that was just a panic attack” I stated, quite matter-of-fact.
“A panic attack? Over a cashew nut?” My brain was unconvinced.
“A panic attack” I insisted.
“Not really surprised the body panicked after you fed it something that tasted like turd…Just wish it would do that every time you had carrot sticks for snacks…Wouldn’t kill you to eat a bag of Monster Munch you know”
Despite my dislike of other nuts, I do quite like almonds (though that may be due to my obsession with Bakewell Tarts). So, after my disastrous attempts at trying other nut butters and finding myself quite disgusted by them I decided to at least try almond butter…The result being that I bloody love the stuff! (Weird I know).
This little revelation allowed me to experiment with these Almond Butter and Chia Seed Energy Bites to keep me focused during a 3 hour yoga class (yes after a day at work…I know, I must be daft).
No Bake! (So easy peasy really).
1 x cup of rolled oats
3 tbsp Almond Butter (I used Meridian because…Well…It was the only brand I could get at Tesco – and it tastes awesome)
1 1/2 tbsp honey (because I seem to have honey in everything at the moment)
1 tbsp currants
Chia Seeds (for rolling in…no not you, the balls…The energy balls! Geez).
Throw oats, raisins, honey and almond butter in a bowl and combine.
Roll mixture into balls and roll these in Chia seeds.
Bob the balls into a seal-able tub and put in the fridge for a couple of hours (I left mine overnight).
Then enjoy whenever you like!
Obviously you can change this about a bit – use peanut or cashew butter for example? Substitute the currants for goji berries or cranberries, add a bit of cocoa powder for a chocolate twist. There are so many possibilities with these.
PS – Who’s looking forward to ‘Fortitude‘ episode 4 tonight?! I’m really enjoying it so far and the way it has been filmed is just spectacular!
