Alternative title: (Insert joke about chocolate nuts here)…
The problem with going food shopping when you’re hungry (read as: so hungry you’ve passed the point of telling anyone who will listen just how starving you are and you are now at the stage of zoning out while imagining burgers in place of people’s heads), is that you inevitably end up in the chocolate aisle rubber necking at the peanut butter cups…
Even though you don’t like peanuts and have never tried such a concoction in your whole life.
Why is it always the bloody peanut butter cups?!
It got me thinking as I traipsed back towards the fruit and veg aisle…Why couldn’t I just make my own nut butter chocolate cups? That way, I could substitute the peanut butter for my beloved almond butter (yes the love affair continues…No that isn’t weird!).
So that is just what I did…
Nutty Buttery Chocolate Cups
Makes 6 cups:
100g fine dark chocolate (I used Lindt 85% cocoa).
100g white chocolate (Lindt with a touch of vanilla)
Nut butter (I’m using Meridian Almond Butter)
Little cake cases
First melt the dark chocolate – I put a bowl over a pan of hot water (bowl not touching the water) and stirred the choc until totally melted.
Put 1 ½ tbsp of the chocolate into each case and bob them in the fridge to set.
Once the dark chocolate has set (this takes a matter of minutes) add a small dollop (approximately ½ tsp) nut butter to each cup and place back into the fridge while you work on melting the white chocolate.
Once white chocolate has melted add 1 tbsp to each of the cups (covering the nut butter).
Place back into the fridge to set and then enjoy that sweet, chocolatey, nutty goodness…
I know they’re not the healthiest snack ever created but I’m a firm believer in everything in moderation and as long as I don’t eat all 6 of them this evening then I’m good…
I can have 5 though right?
(Store them in an airtight container in a cool place, not in the fridge though…If you do forget to remove them from the fridge once set – like me first time round – and find them the next day don’t just shove them straight in your mush, give them chance to warm up a bit, your teeth will thank you).
