Beetroot with Bite

Alternative title: #LHB_Juice_January Day 1 … Chilli Beetroot Juice. 

As I mentioned in my previous post I am attempting to introduce more fruits and veggies into my diet and the easiest way for me to do this is with juices (the things we do for our health huh?)… Which means that for the whole of January I’m going to be mixing all sorts of concoctions together and sharing a daily juice recipe on here (I also have a hashtag so you can keep up with all the posts on my Twitter or Insta and a Pinterest board if that’s your preferred thing!).

So let’s kick off #LHB_Juice_January with a juice I’ve affectionately named “Beetroot with Bite”.

Why beetroot you ask? Well…

Beetroots are an amazing source of various Vitamins (especially B6B9 – Folate  and C), Minerals (Manganese, Potassium, Iron, Magnesium to name but a few!), Protein, Soluble Fibre and Nitrates … These Nitrates, by the way, are linked to a reduction in blood pressure  in those with high blood pressure (have a read here on the Queen Mary University of London news site).

I should mention before we start this juice that it would be wise to wear gloves when handling beetroot … The staining is a right faff! Also, too much beetroot may turn your pee / poop a pinkish colour (TMI or fun fact of the day?).

Ingredients (Makes 1): 

1 Beetroot and leaves … No I’m not kidding about the leaves, chuck ’em in (give the beet a scrub before you peel obviously)

1/2 red chilli (remove the seeds)

1/3 cucumber

Just slice it all up and bob in the juicer (for this one I’m using a Nutribullet so I also added 200ml water)!

Bit of a Boost


  1. I love beetroot… never thought of juicing it though. I usually enjoy it pickled and dunked in salad cream… or sliced in a sandwich. I imagine it has a sweetish taste to it when juiced.

    Interesting addition to my juicing recipes 🙂

      I love beetroot too – can’t have a sandwich or potato pie or Lancashire hot pot without it! Earthy but sweet.

  2. I am going to try it… As soon as I go to Lidl for a beetroot and a cucumber… I have a chilli plant with like, twenty red chilli’s on it! Erm… Like a complete dimbo… Do I need to cook the beetroot first?! X

      I really liked this one (I love the taste of beetroot) and went with raw rather than cooked for this one. I so need a chilli plant … Though don’t have enough room on my windowsill 🙁 x
