Roasted Pepper Soup

Alternative title: In which I find a rather demonic looking roasted pepper and consider repenting my sins…Until I realise that the sun will probably supernova before I finish listing them all…Sigh.

 

“Why are you making something you don’t like?” my brain huffed.

“What do you mean?” I rubbed my eyes and cursed the onion.

“Well, you freaking hate pepper…Why are you making a pepper soup?”

“You’re thinking of a different type of pepper” I mutter.

“…huh?” my brain was rather befuddled.

“You’re thinking of peppercorns, a seasoning, part of the Piperaceae family…We’re using Bell and Chiquino peppers, which are called Capsicum and part of the Nightshade fam-”

“Nightshade? … Are you bonkers?!”

This is the genius I live with.

Roasted Pepper Soup

Serves 4-5

1 tbsp olive oil (plus a bit extra to drizzle over the peppers prior to roasting).

3 x large carrots

1 x large onion

4 x Bell peppers

4 x Chiquino peppers

2 cloves of garlic

2 tsp cumin seeds

1 tsp coriander seeds

1 tsp fennel seeds

2 pints vegetable stock

How fabulous do those peppers look?!

Preheat the oven to 180C and prepare the veggies:

– cut the bell peppers into quarters and the chiquino peppers in half, remove the seeds.

– peel carrots and slice.

– slice onion.

Once the oven is hot enough, place the peppers cut side down on a baking tray (or two), drizzle with olive oil and bob in the oven. I cooked these cut side down for 10 minutes, then flipped them over for an extra 10 minutes.

While the peppers are roasting add the coriander, cumin and fennel seeds to a frying pan and lightly toast…Then smush the spices (I have to use a mortar and pestle as I haven’t gotten around to investing in a processor yet…sigh).

I love this spice combination…The smell is just amazing.

Heat the olive oil in a pan over a medium heat and add the onion and crushed garlic until tender.

Then add the carrots…

Once the peppers have charred slightly remove from the oven and allow them to cool a little bit before slicing and adding to the mix…

…Then *BAM* colour sensation!

 

When the veggies have all cooked through, give it a good blitz and enjoy!

I kept the skin on the peppers to do this but that was purely a taste thing, I only cooked the peppers until they were slightly charred. This is personal preference though, you can always remove the skin if you prefer it.

As an aside…Does anyone else think that this pepper looks particularly pissy?

PS – I can’t believe we’re nearing the end of ‘Fortitude‘…I’ll be after some recommendations for TV series in a couple of weeks when I’ve calmed down! I’m also quite curious as to what the ‘Inside No 9‘ guys have for us this evening, last weeks episode left me an emotional wreck!

  1. This looks absolutely delicious! I love raw peppers but not a fan of cooked ones (I’m weird) but will be giving this a go! Your pissy looking pepper did make me chuckle!
