Alternative title: #LHB_Juice_January Day 5 … Avocado, Beetroot, Ginger and Cucumber Juice.

Ok folks, it’s day 5 of #LHB_Juice_January and we’re kicking the day off with a “Smooth Beet” Juice … As some of you are already aware, I am a HUGE fan of the Avocado – Even though the Avocado is the reason I had my Slimming Club membership revoked. Trust me when I say, it totally wasn’t a bad thing! And I still maintain that an Avocado eating contest in the local supermarket would indeed be truly epic provided John Catucci referees it – Come on John, you know you want to!

Why Avocado you ask? Well…

For a start I’m going to put this out there – Not all fats are bad fats!

Avocados are high in Monounsaturated fats (specifically Oleic Acid), they are also rich in various Vitamins (particularly the B Vitamins, C, E and K) and Minerals (especially Potassium, Magnesium, Manganese, Phosphorus and Zinc) … They also contain a decent dose of *ahem* fibre.

Quite the little powerhouse really!

This is quite an earthy drink … So yeah, bit of an acquired taste.

Ingredients (Makes 1): 

1 Beetroot and leaves … No I’m not kidding about the leaves, chuck ’em in (give the beet a scrub before you peel obviously)

1/2 Avocado (peeled)

1/3 Cucumber

1 thumb sized piece of Ginger (peeled)

Just slice it all up and bob in the juicer (for this one I’m using a Nutribullet so I also added 200ml water)!
